Every time I photograph a painting (pastel or oil), the yellow ochre JUMPS out like it's 3D. Why? I'm really reducing the amount I use because of this.

I've never known that to happen. Are you lighting your paintings with yellow light (standard interior incandescent bulbs) when you photograph them? Perhaps that is causing the problem, if so.
